Smoked Mozzarella and Butternut Squash Cappellacci with Sage Butter: originally from the Ferrara Region, this hat-shaped pasta is stuffed with smoked mozzarella and butternut squash. Subtle flavoured sage butter complements these fillings.

  • Storage

    Herts Pasta can be kept in the fridge for a maximum of 2 days. Not suitable for freezing.

  • Cooking Instructions

    Put a large pan of water to boil, when boiling add a good pinch of salt.

    Add the cappellacci and cook for 4 minutes.

    In a separate pan heat the sage butter until it is melted, add 2 tablespoons of the heated salted water mix well, then put to one side.

    When the pasta is ready drain in a colander. Mix the pasta with the melted sage butter emulsion.

    Using tongs and a spoon transfer to plate/s, sprinkle with parmesan.
