Ravioli alla Norma

Pasta alla Norma is one of Sicily’s most loved pasta dishes. Originating in Catania, (Sicily’s second biggest city) it is rumoured to have been named after Vincenzo Bellini’s well-loved opera ‘Norma’, due to its greatness!
The ravioli are filled with slow cook aubergine, ricotta, basil and pecorino served with tomato sauce and pecorino cheese.

Herts Pasta can be kept in the fridge for a maximum of 2 days. Not suitable for freezing
Cooking Instructions
Put a large pan of water to boil, when boiling add a good pinch of salt. Add the ravioli and cook for 4 minutes.
In a separate pan heat the tomato sauce until simmering.
When the pasta is ready drain in a colander. Mix the pasta with the tomato sauce. Using tongs and a spoon transfer to plate/s, sprinkle with pecorino.
