also called Parmigiana di Melanzane (aubergine), is made with fried, sliced aubergine, layered with cheese and tomato sauce, then baked. The origin of the dish is claimed by both the southern regions of Campania and Sicily. (GF, CIC)

  • Storage

    Herts Pasta can be kept in the fridge for a maximum of 2 days. Suitable for freezing.

  • Cooking Instructions

    • DO NOT MICROWAVE
    • Put the oven on at 180 C or a gas mark 6 (fan oven is ok).
    • Take the foil container and then remove the lid, put on a tray in the oven for 25 minutes. Take the tray from the oven with an oven cloth. Be careful. Spoon the Parmigiana di Melanzane without bruising it, from the container onto a plate.
